i'm in the market to buy a ute. some utes i have seen don't have trays on them,.. if i buy a tray from the wreckers are they universal? as in can i put any tray on any ute? or does it have limitations?

Hmmm, you'll need a tray from the same make, and generally same model.
A tray off a Toyota Lancruiser won't drop onto a Falcon cab chassis for example..

Generally YES
They mite need NEW or modified mounts points, As all ute trays dont bolt up the same Just check the length and width |

Companies like Flexiglass use a universal tray body although they do have different mounting points and different headboards.
I thought about getting a factory tray on my FG and i was trading my 2 door ranger that i had modified the tray and wanted to keep it.

Provided they arent too long or wide for you car they will fit generally just need to move the mounts or if your lucky like the apprentice at my work it was an exact swap of a factory ranger tray to an 02 hilux

Chassis rail widths can vary, as do the mounting points, you'll need to measure everything up beforehand.
